In her role as a buyer for Middlebury Natural Foods Co-op, in Vermont, she encountered buckwheat in flour form, a faintly nutty-tasting and increasingly popular gluten-free baking ingredient. Founded and operating out of Waterville, Maine, Maine Crisp Company is a pioneer in using naturally gluten-free buckwheat and a unique combination of nuts, seeds and dried fruit.
