We're trying to share some brightness as the world continues to fight today. You might be distanced from loved ones, unable to celebrate the holidays, or snug at home with your kiddos and getting extra creative about keeping them occupied. It's a Friday, treat your family, your partners, yourself! Grab some pastel odds and ends from the pantry, fresh fruit if you have it, salty pretzels and Cranberry Almond Crisps. Drizzle some wildflower honey over fresh ricotta and you've got a no-fuss-almost-too-pretty-to-eat spread. Call this your late afternoon snack, or this spring platter might just become dinner. That's okay, too.

Ingredients

Fresh Ricotta (We like Crooked Face Creamery)

2 tbs. Wildflower Honey

Sliced fruit such as tangerines, apples, strawberries, kiwi, starfruit, kumquats, raspberries..we like 'em all

Pastel chocolate covered sunflower seeds

White chocolate covered pretzels (skip if you want to keep your snacking gluten-free!)

Cranberry Almond Crisps (or Cinnamon)

Directions

Wash and cut up the fruit of your choice.

Break up the ricotta if it came formed. In a bowl, drizzle the honey over the ricotta pieces (crack a little black pepper over the top if you want a bit of bite)

Lay out the crisps, fruit, and sweets on a platter, any which way you feel.

Admire, *sigh*, start snacking.

👀If you're feeling extra frisky, pop a bottle of bubbles. I just tried Frico Frizzante last week, 10/10 would drink with this spread!
